Gluten Free Tuesday???

You might wonder why I have Gluten Free recipes on my blog. Well my 5 year old granddaughter has Celiacs Disease and cannot have Gluten. She was diagnosed 6 months ago and was just retested to see if she has been accidentally getting Gluten in her diet and it was negative. Her mommy is doing a fantastic job watching out for her and her diet. Kudos to Vicki Lee. Gracie is so diligent in asking if foods have gluten in them. When you offer her anything to eat she always asks "does it have gluten in it?" For a 5 year old she is sure informed. Even her 3 year old brother Braden asks if things are gluten-free. Hes always looking out for his big sissy.

Gluten Free Tuesday Recipe


Double Chocolate Gooey Butter Cake

Ingredients
1 cup butter, melted, plus additional butter for greasing pan

1 (15 ounce) package Betty Crocker Gluten Free chocolate cake mix
3 eggs


1 (8 ounce) package cream cheese
3-4 tablespoons cocoa powder
2 cups powdered sugar
1 teaspoon vanilla extract
1 cup chopped nuts

Directions
1 Preheat oven to 350°F.
2 Lightly grease 13x9-inch baking pan.
3 In a large bowl combine cake mix, 1 egg and 1 stick of melted butter and stir until well blended.
4 Pat mixture in to pan.
5 With mixer, beat cream cheese until smooth.
6 Add 2 eggs, cocoa powder and powdered sugar.
7 Beat until all ingredients are well mixed.
8 Slowly add 1 stick of melted butter and vanilla.
9 Beat until smooth.
10 Stir in nuts with spatula.
11 Spread filling over cake mixture.
12 Bake for 40-50 minutes.
13 (Be careful not to overcook, center should still be a little gooey when finished baking).
14 Let partially cool on wire rack before cutting.
15 Serve alone or with vanilla ice cream.

Bradens birthday


Braden had a wonderful birthday party. His mommy made a delicious chocolate gluten free cake for him. He had lots of friends and family at his party. It was a very hot day but by 6:30 there was a breeze and we had fans going and had a great time. Happy 3rd Birthday Braden!!!
